Because it is what they have learned from their leaders and not worth studying for themselves. They are like the children of Israel, they want "(Pastor Moses, that, priest, etc.) to tell them what to do, not God.
Proof text is a pretext.
The old covenant was the one who made the Ten Commandments, but the rest of the law, and that the alliance ended after the death of part of the first part ends, Jesus Christ, as a covenant of marriage in the deaths of the two parties. Paul explains in Romans 7th
Saturday was the sign of the covenant between God and Israel only. Christians are not parties to the Covenant. God does things "illegally" as you suppose. They are practicing the theology of replacement, with the leadership of a group and its application to another.
There is no command for Christians to observe the Sabbath. Christians follow the law in the new alliance.
